- 1/2 cup Italian Bread Crumbs
- 1/2 cup Parmesan Cheese
- 1/2 teaspoon Garlic Powder
- 4 Tablespoons Butter
- Zucchini, sliced
- Yellow Squash, sliced
- Onion, sliced
- 1/2 pound small Red Potatoes, quartered
Preheat oven to 350.
Mix bread crumbs, parmesan cheese and garlic powder.
Dip chicken into butter, then into bread crumb mixture and coat - set in baking dish.
Combine veggies and potatoes, toss with remaining butter and bread crumbs - add to baking dish.
Bake for 35-45 minutes until chicken is cooked through and veggies are tender.
